Egg-Free Breaded Zucchini Recipe
Ingredients:
- 2 medium-sized zucchinis
- 1 cup of flour (for breading)
- 1 cup of milk (plant-based milk can also be used)
- 1/2 cup of flour (to mix with the milk)
- 1 cup of breadcrumbs
- Salt to taste
- Pepper to taste
- Garlic powder (optional)
- Oil for frying
Instructions:
Preparing the Zucchini:
- Wash the zucchinis and trim the ends.
- Slice the zucchinis into approximately 1 cm thick rounds.
Preparing the Breading:
- Prepare three bowls.
- Place the flour in the first bowl.
- Pour the milk into the second bowl and mix in the 1/2 cup of flour to create a thicker batter.
- Place the breadcrumbs in the third bowl, and season with salt, pepper, and garlic powder if desired.
Breading:
- First, coat each zucchini slice in the plain flour, making sure each side is covered.
- Then, dip the slices into the milk-flour mixture and let the excess drip off.
- Finally, coat the slices with the breadcrumbs, ensuring each side is evenly covered.
Frying:
- Heat oil in a frying pan over medium-high heat.
- Place the breaded zucchini slices in the hot oil and fry until golden brown on both sides, about 2-3 minutes per side.
- After frying, place the breaded zucchini slices on a paper towel to absorb any excess oil.
Serving:
- Serve the breaded zucchini hot, with a fresh salad, dip, or side dish of your choice.
Tips:
- For a crispier coating, you can repeat the milk-flour and breadcrumb steps.
- Experiment with different spices in the breadcrumbs, such as paprika, oregano, or Parmesan cheese for an even more flavorful result.
