Egg-Free Breaded Zucchini Recipe

Ingredients:

  • 2 medium-sized zucchinis
  • 1 cup of flour (for breading)
  • 1 cup of milk (plant-based milk can also be used)
  • 1/2 cup of flour (to mix with the milk)
  • 1 cup of breadcrumbs
  • Salt to taste
  • Pepper to taste
  • Garlic powder (optional)
  • Oil for frying

Instructions:

  1. Preparing the Zucchini:

    • Wash the zucchinis and trim the ends.
    • Slice the zucchinis into approximately 1 cm thick rounds.
  2. Preparing the Breading:

    • Prepare three bowls.
    • Place the flour in the first bowl.
    • Pour the milk into the second bowl and mix in the 1/2 cup of flour to create a thicker batter.
    • Place the breadcrumbs in the third bowl, and season with salt, pepper, and garlic powder if desired.
  3. Breading:

    • First, coat each zucchini slice in the plain flour, making sure each side is covered.
    • Then, dip the slices into the milk-flour mixture and let the excess drip off.
    • Finally, coat the slices with the breadcrumbs, ensuring each side is evenly covered.
  4. Frying:

    • Heat oil in a frying pan over medium-high heat.
    • Place the breaded zucchini slices in the hot oil and fry until golden brown on both sides, about 2-3 minutes per side.
    • After frying, place the breaded zucchini slices on a paper towel to absorb any excess oil.
  5. Serving:

    • Serve the breaded zucchini hot, with a fresh salad, dip, or side dish of your choice.

Tips:

  • For a crispier coating, you can repeat the milk-flour and breadcrumb steps.
  • Experiment with different spices in the breadcrumbs, such as paprika, oregano, or Parmesan cheese for an even more flavorful result.
